Roquefort, pepperoni cheese and onion cheese
Answers: Oh, I love cheese--probably more than I should! Feta can be wonderful, especially if it is served from a tray with the solution still in it, as was the case surrounded by a market on First Street in Duluth, Minnesota. Good blue or Roquefort is fine, too. Bredeson's (of northern Wisconsin) goat cheese is great. Colby, various Swiss types, bricks, fresh curds, Gouda, Edam, and masses others are treats, too.
Still, I think my very favorite is really, really aged Cheddar. There is a shop not far from my northern Wisconsin home that sell 12-year-old Cheddar, and I once sent a block to a newspaper in Newfoundland to show my appreciation for their help on a circulation promotion. That cheese is rich and profusely aromatic (in a good way), and is almost granular and on the other hand creamy at the same time.

I like cheddar and the sharper it is, the better.
my personal favorite cheese is between fresh mozzarella and havarti.
this has nothing to do near fish,but i like string cheese the best =)
