You don't want to start riding them before they are two because near knees are still growing together & you can ruin them.
I am working with a yearling mule. I will not do any riding at all until he is at least two, perchance not until he is three.
Yet, he already has been introduced to everything you named. He hasn't have an actual saddle on, but he has had a riding pad near girth and stirrups. He's also had a 20 foot long rope wrapped around him like a harness.
